As transportation was not as convenient in early days, most tea produced in the central Taiwan's mountain region was mostly roasted for preserving tea quality during transportation period for tea. However, today's tea-making technology has been advanced such that roasting by machine has become popular, however, the strong resultant floral and fruity aroma from natural roasting is something machines are unable to produce, so this tea variety is the very labor of love of roasting masters.
